- 2 tablespoons neutral cooking oil: (Canola, vegetable, or peanut oil).
- 2 large eggs: Lightly beaten.
- ½ cup small white or yellow onion: Finely diced.
- ½ cup frozen peas and carrots blend: Thawed.
- 2 cloves garlic: Minced (optional, but highly recommended).
- 2 to 3 tablespoons soy sauce: Adjust to taste.
- 1 teaspoon toasted sesame oil: For that signature flavor.
- 2 green onions (scallions): Thinly sliced, for garnish.

Instructions
